Soya Biriyani
Packed this for lunch today - quick and easy and tasty option, when you don't have veggies at hand or are too lazy to chop veggies in the morning. My family is pretty specific on having non messy food for lunch, so, this was a good option to turn to. :)
Ingredients:
Soya nuggets - a handful, cooked in boiling water for 5-7 mins and drained
Rice - 1 cup, soaked for 15 mins and drained
Onion - 1 Medium sized, chopped
Tomato - 1 Medium sized, chopped
Coriander Leaves - a handful
Oil - 1 tsp
Sombu / Saunf - 1 tsp
Jeera - 1 tsp
Ginger garlic paste - 2 tsp
Chilli powder - 1 tsp
Coriander powder - 1 tsp
Garam Masala - 1 tsp
Turmeric Powder - a pinch
Salt - To taste
Method:
1. In a pressure cooker, add a tsp oil. Once the oil is hot, add saunf, jeera.
2. Once the jeera splutters, add the ginger garlic paste. Saute well.
3. Add onions now.
4. Once the onions are translucent, add the tomatoes and a pinch of salt.
5. After the tomatoes turn mushy, throw in the coriander leaves and give it a toss.
6. Add the powders one by one and mix well to get a good gravy.
7. Now, add the soya and the drained rice. Saute for a few minutes until they all blend together.
8. Now, add water (1:2 proportion i.e. 2 parts of water to 1 part of rice).
9. Salt the water. It should slightly saltier than usual, as the rice will absorb the salt.
10. Once the water starts boiling, close the cooker and cook for 1 whistle only. (Alternately, you could cook in a microwave or pan, if you have the time).
I served it with onion raita and chips. Thumbs Up!
