Chocolate biscotti
Let me start like this - I am a HUGE and that's huge huge coffee lover and anything that goes with coffee, I'll take it - chocolate, donuts, pastries, Milk Bikis, murukku... biscotti. (FYI, Biscotti is just twice baked biscuit in Italian.) I had it for the first time from Costco in the US and boy, it was love at first sight. I've made them at home and enjoyed them all on my own... with no competition at all from my beloved critics.
I kind of forgot about them back here in India... until I saw this Double Chocolate Biscotti from Edible Garden. It's been open on my browser for quite some time and Thursday(yes!), I was finally able to try it out. What a smashing hit it was! I've been asked to make some for a team meeting next week as well!!! I tweaked a couple of ingedrients from the original recipe to suit our tastes. So, here's my tweaked version:
Ingredients:
Dry mix:
Maida - 1 c
Cocoa Powder - 1/4 c
Instant Coffee - 1 tsp
Chopped Pecans - 1/4 c
Baking Powder - 1/4 tsp
Salt - a pinch
Wet Mix:
Butter - 3 Tbsp
Sugar - 1/4 c + 2 Tbsp
Egg - 1
Vanilla Essence - 1/4 tsp
Steps:
1. Beat the butter and sugar until fluffy.
2. Add egg and vanilla essence and beat well.
3. Sift the dry mix ingredients together.
4. Add the dry to the wet mix in batches until a sticky dough forms. (Don't waste any of that sticking on bowl, whisk, spoons! We lick them all clean! :))
5. Spread out into a flat log not too broad, else you will end up with extra long biscottis.
6. Preheat oven to 180C.
7. Bake log until it's well cooked in the middle and there are cracks on top. Mine took ~25 mins.
8. Take out, cool and cut into strips.
9. Bake again for 5 mins on one side. Turn over and bake the other side for 5 more mins.
There are more detailed steps and pictures on Edible Garden. Do check if you need help at any step! But, awesome biscottis, just AWESOME!!! :)
P.S. I have now made these twice, but they seem to taste better the day after they are made. I guess the flavors just meld and mix in the resting time they get.
